Preparation:

Preheat oven 180 degree

Grease cake tin

Ingredient:

125g butter

3/4 cup caster sugar

2 eggs, lightly beaten

1 1/4 cups S.R.F

1tsp bi-carb soda

2 tb milk

3/4 cup mashed banana

1/4 cup chopped pecans

1/2 cup choc chips

 

Banana, Nut and Choc - Chip Cake

 

Icing

125g cream cheese

1/4 cup icing sugar

1tsp vanilla essence

2tb cream

METHOD

- Beat butter & sugar until light & creamy, add eggs gradually, beating thoroughly.

- Fold in sifted flour & soda alternatively with milk, stir through banana, pecans & choc chips.

- Spoon into cake tin & bake for 40 - 45 mins.

- Allow cake to cool before icing.

- Beat cream cheese till light & creamy, add icing sugar (please see the icing ingredients above) , essence & cream. Beat thoroughly until well combined.

- Spread icing over cake (optional: decorate with strawberry and choc chips, or you may spread some nuts).
